Homemade Zahtar
This is a traditional Middle Eastern blend of nuts, herbs and spices. It's super easy to make and is most often combined with olive oil and used as a dip or spread on bread.
Makes about 8-9 tbsp
6 tbsp white or black sesame seeds (or a mix of the two)
3 tbsp ground sumac
3 tbsp coriander seeds
2 tbsp dried oregano
1 tbsp dried thyme
2-3 tsp salt
tbsp = tablespoon
tsp = teaspoon
Directions:
- Dry toast the sesame seeds for a few minutes over a medium heat. When the white ones start to darken and you can really smell the nutty aromas, take them off the heat and allow them to cool
- Once cool, add them to your grinder with the coriander and salt and coarsely grind
- Add to a bowl and stir in the sumac
- Finally, crumble in the dried thyme and oregano and combine thoroughly
That's all there is to it!
Store in an airtight container out of direct sunlight. Use within 3 months.

How to Toast and Grind
Dry toasting and grinding spices is the key to getting the most flavour out of your ingredients and into your home cooking...
Step 1: Add your whole spices to a dry pan over a low to medium heat and whilst stirring or shaking the pan, lightly toast them for a few minutes. When you can really smell the aromas and they start to darken, they're ready.
Step 2: Let them cool and then grind.
Step 3: For a finer blend, put them through a sieve before combining with any ground ingredients and herbs.
