This easy to make homemade apple pie spice is the ideal mix for all your pies, pastries, puddings, not just apple pie! Using a tasty blend of cinnamon, cloves, nutmeg, ginger, allspice and coriander seeds, it's probably my most used dessert blend. (See the bottom of the page for links to more of my recipes)
Ingredients: (makes 5-6 tablespoons)
3 tbsp coriander seeds
2 tbsp allspice berries
2 tsp ground ginger
1 tsp whole cloves
3 inch piece cinnamon stick
1 whole nutmeg
tbsp = tablespoon
tsp = teaspoon
Directions:
Store in a cool place in an airtight jar out of direct sunlight. Use within 2-3 months.
Note: You can dry toast the whole cloves, allspice berries and coriander seeds before grinding. This toasting releases even more flavours, colours and aromas and is recommended if you have a few minutes to spare. Click here for info on this. (Link opens in new window)
Ingredient Note: I recommend using some whole ingredients for this recipe as you will get better flavours. If you don't have them available just use pre-ground powders, but halve the quantities you use. For example, for 2 tablespoons of allspice berries you would use 1 tablespoon of pre-ground powder. Reduce any others you don't have whole by half as well and stir in with the other powders when making.
