What could be better than a homemade beef stew seasoning for adding fab flavours and mouthwatering aromas to your simmering home cooked stews and casseroles? A tasty blend of dried herbs and spices, it goes excellently with beef and also makes a quality general seasoning for other meaty dishes. (See the bottom of the page for links to more of my recipes)
What You'll Need: (makes about 10-11 tablespoons)
3 tbsp cumin seeds
2 tbsp dried oregano
1 tbsp paprika powder
1 tbsp dried rosemary
1 tbsp dried basil
1 tbsp garlic powder
1 tbsp black peppercorns
4 tsp chili powder
2 tsp mustard powder
2 tsp fennel seeds
2 tsp onion powder
2 tsp salt (see note 2 below)
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your seasoning for beef stew in an airtight jar out of direct sunlight and in a cool place. Use within 3 months before making a fresh amount.
Note: If you want to get even more flavours from the ingredients, then dry toasting the peppercorns, cumin and fennel seeds before grinding and combining is worth doing.

Note 2: You can use regular table salt for this recipe and it'll taste great, but I recommend using a quality sea/flakes/rock/kosher salt etc if you have them to hand. Not only are these healthier, they will add better flavour!
Ingredient Note: I use a few whole ingredients for this beef stew seasoning as they give the best flavours. If you don't have whole, just use their pre-ground versions and reduce the amount the recipe requires by half. For example, instead of 3 tablespoons of cumin seeds you use 1½ tablespoons of pre-ground cumin. Reduce any others you don't have by half as well and stir in with the other powders when making.
