In the Barbecue pits of Carolina you'll often find pork on the grill. So here's my take on a Carolina BBQ rub that will season perfectly, flavour beautifully and add mouthwatering aromas to your succulent pork chops and ribs. (See the bottom of the page for links to more of my barbecue blends)
What You'll Need: (makes about 12 tablespoons)
4
tbsp paprika
3 tbsp brown sugar
2 tbsp chili powder
2 tbsp cumin seeds
2 tbsp dried oregano
2 tbsp dried thyme
4 tsp black peppercorns
4 tsp mustard powder
4 tsp garlic powder
2 tsp sea salt
2 tsp celery seeds
1 tsp grated nutmeg
1 tsp whole cloves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your Carolina BBQ spice in an airtight jar out of direct sunlight. Use within 3 months before making a fresh amount.

Note: Try and use as many whole spices as
you can as these will add the best flavours to your finished mix. If you don't have them to hand just use pre-ground powders and reduce the amount the recipe requires by half. So for 2 tablespoons of cumin seeds you would use 1 tablespoon cumin powder. Reduce any others you don't have whole by half as well.
