Create your own chili seasoning mix recipe and you'll be able to choose exactly what heat or spiciness is to your liking. Fancy heat? Use hot peppers. Prefer it mild? Simply use milder peppers. Below is a fairly potent blend that will add fab flavours to your meaty chilis and many other dishes. (See the bottom of the page for links to more of my recipes)
Note: In this chili spice I use a few whole ingredients. But not eveyone always has them available. So if not, you can substitute whole for pre-ground powders if you reduce the amounts you use by half. For example, for 1 tablespoon of fennel seeds you would use 2 teaspoons of pre-ground fennel. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
What You'll Need: (makes about 12 tablespoons)
half a cup of dried peppers (any variety)
OR 8 tbsp flakes
3 tbsp smoked paprika
2 tbsp cumin seeds
1 tbsp black peppercorns
1 tbsp fennel seeds
4 tsp onion powder
2 tsp garlic powder
2 tsp sea salt
1 tsp cloves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store in an airtight container out of direct sunlight. Use within 3 months.
