So your ground venison is all prepared, now all you need is a deer sausage seasoning and you're set. And this easy-to-make homemade blend of complementary spices and herbs is just the thing for seasoning and flavouring your meat to perfection. What You'll Need: (makes about 7 tablespoons)
2 tbsp cumin seeds
2 tbsp dried rosemary
1 tbsp dried oregano
1 tbsp black peppercorns
2-3 tsp chili powder
2 tsp garlic powder
2 tsp salt (see note 2 below)
2 tsp onion powder
1 tsp juniper berries
4 dried bay leaves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your deer sausage seasoning in an airtight container out of direct sunlight and in a cool place. Use within 3 months.
Note: If you have time you could dry toast the cumin seeds, juniper berries and peppercorns before cooling, grinding and combining with the other ingredients. This will bring out even more flavours. See the grinding page for further info on toasting and grinding. (Link opens in new window)
Note 2: You can use processed table salt for this recipe if that's all you have available, and it'll still taste fine. However, as you've gone to the effort of making your own blend I recommend using a quality sea, rock or kosher salt. Not only is it healthier, it will definitely taste better!
Ingredient Note: I use a few whole spices for this deer sausage spice mix as these will add the best flavours. However, if you only have pre-ground available you can use these. If you do, just reduce the quantities the recipe requires by about half. So for 2 tablespoons of cumin seeds you use 1 tablespoon of pre-ground cumin. Reduce any other ingredients you don't have whole by half as well and stir in with any other powders when making.
