For the home fajita maker, a homemade fajita seasoning mix is just the thing for tastier cooking. Easy to make, this blend of dried lemon peel and herbs and spices is ideal if chicken is on the menu. (See the bottom of the page for other recipes)
What You'll Need: (makes about 10 tablespoons)
3 tbsp chili powder
2 tbsp coriander seeds
2 tbsp dried thyme
2 tbsp dried lemon peel (optional)
1 tbsp garlic powder
1 tbsp black peppercorns
4 tsp mustard seeds
4 tsp dried marjoram
4 tsp paprika powder
2 tsp onion powder
2 tsp sea salt
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your fajita mix in an airtight jar, in a cool place and out of direct sunlight. Use within 3 months before making a fresh amount.
Note: Dry toasting the coriander, mustard seeds and peppercorns before grinding and mixing with the other ingredients will add even more flavours to your finished blend.

Note 2: You can buy dried lemon peel online or make your own fairly easily. However, you can leave this out if you like and you'll still end up with a very tasty seasoning.
Note: Where I can I use as many whole spices as I can which I grind as these gives the best flavours. If you only have pre-ground powders to hand, simply use these and reduce the amounts the recipe requires by half. So instead of 2 tablespoons of whole cumin seeds you would use 1 tablespoon of pre-ground cumin. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
