If you're into making sausages, then a homemade Italian sausage seasoning is definitely recommended. And this easy-to-make recipe, using a blend of traditional spices and herbs, will add superb flavours, mouthwatering aromas and season your ground pork dishes wonderfully! (See the bottom of the page for other recipes)
What You'll Need: (makes about 10 tablespoons)
3 tbsp coriander seeds
2 tbsp dried oregano
2 tbsp dried basil
1 tbsp dried sage
1 tbsp peppercorns
1 tbsp onion powder
1 tbsp garlic powder
4 tsp fennel seeds
4 tsp paprika powder
2-3 tsp cayenne pepper
2 tsp grated or ground nutmeg
2 tsp salt (see note 2)
1 tsp saffron strands (optional)
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your sausage spice in an airtight jar out of direct sunlight. Use it within 3 months before making more.
Note: If you're going to the effort of making your own sausage and Italian seasoning mix, you could spend a few minutes lightly toasting the whole ingredients prior to grinding.

Note 2: You could use any salt for this recipe, however, I do recommend using a good quality salt: sea/rock/kosher/flakes etc as they're less processed and I think add a better flavour. However you can use regular table salt (I sometimes do) if that's all you have available.
Ingredient Note: You'll notice that I use a few whole ingredients for this Italian sausage blend and, whilst these will give the best flavours, it's fine to use pre-ground powders instead. If you do, simply reduce the amounts by half. So for 4 teaspoons of fennel seeds you use 2 teaspoons of pre-ground fennel. Reduce any others you don't have whole by half as well and stir in with the powders when making.
