And with this easy-to-make Jamaican jerk chicken seasoning, you'll be able to recreate those sublime flavours and mouthwatering aromas at home in just minutes. Note: This chicken seasoning uses a few whole ingredients which will give the best flavours. If you don't have them all to hand just use pre-ground powders and cut down the amounts you use by half. So instead of 2 tablespoons of whole allspice you would use 1 tablespoon of pre-ground allspice berries. Do the same for any others you don't have whole and stir in with any other powders when making.
What You'll Need: (makes about 10 tablespoons)
3 tbsp dried oregano
2 tbsp hot chili powder
2 tbsp allspice berries
2 tbsp dried thyme
2 tbsp paprika
1 tbsp dried tarragon
4 tsp black peppercorns
4 tsp ginger powder
4 tsp garlic powder
2 tsp annatto seeds (optional)
2 tsp cinnamon
2 tsp sea salt
2 tsp coriander seeds
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your Jamaican jerk spice in an airtight jar out of direct sunlight. Use within 3 months before making more.
Note: If you have the time, and to get even more flavours from the ingredients, dry toasting the peppercorns, coriander and allspice before grinding is recommended.
