La kama is an easy to make blend of spices that will add fabulous Moroccan flavours to your home cooking. And, unlike the super complex ras el hanout (the other famous Moroccan mix), can be made in minutes using just five ingredients. (See the bottom of the page for other recipes)
What You'll Need: (makes about 5 tablespoons)
3 tbsp black peppercorns
1 tbsp turmeric powder
4 tsp cumin seeds
2 tsp ginger powder
1 whole nutmeg
tbsp = tablespoon
tsp = teaspoon
Directions:
Store in a cool place in an airtight jar and out of direct sunlight. Use within 3 months before making a fresh amount.
Note: For this recipe you could dry toast the peppercorns and cumin seeds prior to grinding and combining. The heat will extract even more flavour from the ingredients. Click here for further info on this recommended cooking technique. (Link opens in new window)
Ingredient Note: I use whole cumin and peppercorns for this Moroccan spice which I then grind and combine with the other ingredients. If you don't have these whole, just use pre-ground powders and reduce the amount the recipe requires by half. So instead of 4 teaspoons of cumin seeds you would use 2 teaspoons of pre-ground cumin. For the peppercorns you would use 4 teaspoons of ground pepper and stir in with any other powders when making.
