If you're after true Indian flavours, then this masala spice blend is one I recommend. A fairly basic mix, (compared to some maslas), it'll still add authentic flavours and mouthwatering aromas to a whole host of homemade Indian dishes. And from start to finish you can have it made in less than 5-10 minutes or so! (See the bottom of the page for links to more of my recipes)
Note: You'll note that I use a few whole spices for this recipe as these will add the best flavours. However, if you don't have whole available you can still make it with pre-ground powders. If you do, simply reduce the amounts the recipe requires by about half. For example, for 2 tablespoons of cumin seeds you would use 1 tablespoon of pre-ground cumin powder. Reduce any others by half as well and stir in with any other powders when making.
What You'll Need: (makes about 10 tablespoons)
3 tbsp coriander seeds
2 tbsp cumin seeds
1 tbsp black peppercorns
1 tbsp fenugreek seeds
1 tbsp chili powder
2 tsp mustard powder
2 tsp ginger powder
1 tsp whole cloves
2 inch cinnamon stick
6-8 dried bay leaves
12-15 green cardamom pods
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your masala powder in an airtight container, in a cool place and out of direct sunlight. Use within 3 months before making a fresh amount.
Note: To extract even more flavour from the coriander, cumin, peppercorns, cloves and cardamom pods, dry toasting them for a few prior to grinding and combining with the pre-ground ingredients is recommended.
