This pasilla chile powder is really quick and easy to make and ideal for those who like tons of flavour but less heat. Using a blend of pre-ground pasilla peppers and spices, it can be made in just minutes and will add fab flavours and aromas to numerous dishes. Note: For a lot of my recipes I try and use as many whole spices which I then grind and combine with other ingredients. However, I appreciate you may not have whole spices to hand so this recipe uses pre-ground powders which you simply combine creating a simple, tasty blend in minutes. Ingredients: (makes about 7-8 tablespoons)
3 tbsp ground pasilla peppers
1 tbsp cumin powder
2 tsp ground allspice berries
2 tsp garlic powder
2 tsp paprika powder
2 tsp ground pepper
1 tsp fenugreek powder
1 tsp ajwain powder (optional)
1 tsp turmeric powder
1-2 tsp fine salt
tbsp = tablespoon
tsp = teaspoon

Store your pasilla powder in a cool place, in an airtight jar and out of direct sunlight. Use within 3 months.
Note: You can easily buy pre-ground pasilla pepper online nowadays.
Note 2: I use a quality fine sea/rock salt for this recipe which is healthier than processed table salt. recommend. But if that's all you have, table salt will work.
