Whether you're oven cooking, smoking or grilling your ribs, you're going to need a top notch prime rib seasoning! And this homemade blend of flavour-packed spices and herbs certainly fits the bill. Super easy-to-make, it will season perfectly, flavour beautifully and add mouthwatering aromas to your meat. (See the bottom of the page for links to more of my homemade mixes and blends)
Note: When making this recipe, I advise using a few whole spices when and where you can as these will add the best flavours. However, if you don't have whole just use pre-ground powders and reduce the quantities the recipe requires by half. For example, instead of 2 tablespoons of cumin seeds you use 1 tablespoon of pre-ground cumin. Reduce any others by half as well and stir in with any other powders when making.
What You'll Need: (makes about 7-8 tablespoons)
3 tbsp coriander seeds
2 tbsp cumin seeds
2 tbsp dried rosemary
1 tbsp paprika powder
1 tbsp black peppercorns
1 tbsp garlic powder
4 tsp brown sugar
4 tsp dried parsley
2 tsp mustard powder
2 tsp chili powder
2-3 tsp salt (see note 2 below)
4-5 dried bay leaves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your rib seasoning in an airtight jar out of direct sunlight. Use within 3 months.
Note: You could dry toast the whole coriander, cumin and peppercorns prior to grinding and combining with the powders and herbs. This will add fabulous flavours to your finished mix. Read more about toasting and grinding ingredients. (Link opens in new window)
Note 2: Whilst you can use table salt for this recipe, I recommend using a top quality sea, rock, flakes or kosher salt. Not only is it healthier, your seasoning, and therefore your ribs, will taste better!
