This easy-to-make mix of pumpkin pie spices uses the four typical ingredients: cloves, ginger, nutmeg and cinnamon with the tasty addition of allspice berries and mace and is excellent added to all your puddings and desserts. (See the bottom of the page for links to more of my recipes)
Note: I generally advise using whole ingredients where you can when making your pumpkin spice. Sometimes you might not have them available, in these cases use pre-ground powders but reduce the amounts by half. So 2 tsp of whole cloves seeds equals 1 tsp of pre-ground cloves. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
Ingredients: (makes about 5-6 tablespoons)
2 x 3 inch pieces cinnamon
1 tbsp allspice berries
4 tsp ground ginger
2 tsp whole cloves
2 tsp grated nutmeg (or ground)
4-5 mace blades
tbsp = tablespoon
tsp = teaspoon
Directions:
Store in an airtight jar out of direct sunlight and use within 3 months.
