This sausage seasoning mix is just perfect for the home sausage and burger maker! An easy-to-make mix of herbs and spices, it'll add delightful flavours and mouthwatering aromas to all of your ground pork cooking. (See the bottom of the page for links to more of my recipes)
What You'll Need: (makes about 8-9 tablespoons)
2 tbsp black peppercorns
2 tbsp coriander seeds
2 tbsp dried thyme
1 tbsp mustard powder
1 tbsp fennel seeds
4 tsp dried sage
2-3 tsp chili powder
2 tsp paprika powder
2 tsp salt (see note 2 below)
2 tsp onion powder
2 tsp garlic powder
1 tsp whole cloves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store your sausage seasoning mix in an airtight container out of direct sunlight. Use within 3 months.
Note: If you have time you could dry toast the fennel, cloves, coriander and peppercorns prior to grinding. This will enhance the flavours even more.

Note 2: As you've gone to the effort of making your own blend, I do recommend using a good quality salt, sea, rock or kosher for example. Not only are these healthier as they are less processed, they will add better flavour! However, you can just use table salt if that's all you have available and it'll still taste fab!
Ingredient Note: I use a few whole ingredients for this recipe. If you don't have them whole just use pre-ground powders and reduce the amount the recipe requires by about half. So for 2 tablespoons of peppercorns you use 1 tablespoon of pre-ground pepper. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
