Whether you're oven cooking, grilling or frying your bird, a homemade seasoning for chicken is just the thing for adding awesome flavours and mouthwatering aromas however you prefer to cook it. And this flavour-packed blend of herbs and spices can be made in literally minutes. (See the bottom of the page for links to more of my recipes)
Note: I use whole peppercorns in this recipe, but if you don't have them just use ground pepper and cut the amount in the recipe by half. So instead of 1 tablespoon of whole peppercorns you would use about 2 teaspoons of ground pepper and stir in with the other powders when making.
What You'll Need: (makes about 6-7 tablespoons)
2 tbsp smoked paprika (or regular paprika)
2 tbsp dried sage
2 tbsp dried rosemary
1 tbsp dried basil
4 tsp black peppercorns
2 tsp onion powder
2 tsp garlic powder
2 tsp sea salt
2 tsp cayenne pepper
tbsp = tablespoon
tep = teaspoon
Directions:
Store this chicken seasoning in an airtight jar out of direct sunlight. Use within 3 months before making more.
Note: See the grinding page for tips and info on grinding. (Link opens in new window)
