Making your own spice blend is the absolute key to better tasting home cooked food. And below you'll find an all-purpose recipe that will add fab flavours and mouthwatering aromas and that can be made in literally minutes. (See the bottom of the page for links to more of my recipes)
Note: For this recipe, I recommend using a few whole ingredients when and where you can as these will add the best flavours and aromas. However, if you don't have them whole, you can use their pre-ground versions and reduce the quantities the recipe requires by half. For example, if it says 2 tablespoons of whole coriander seeds, you would use 1 tablespoon of pre-ground coriander. Reduce any others you don't have whole by half as well and stir in with any other powders when making.
What You'll Need: (makes about 6-7 tablespoons)
2 tbsp coriander seeds
2 tbsp dried rosemary
1 tbsp black peppercorns
1 tbsp dried basil
4 tsp cumin seeds
2 tsp paprika
2 tsp chili powder
2 tsp sea salt
2 tsp garlic powder
2 tsp onion powder
6-7 dried bay leaves
tbsp = tablespoon
tsp = teaspoon
Directions:
Store in a cool place, in an airtight jar and out of direct sunlight. Use within 2-3 months.
