Steak Rub Recipe - Add Fabulous 
Flavours to Your Juicy Steaks!

No matter what your favourite way of cooking your meat is, this steak rub recipe will add massive flavours! Whether smoking, grilling, barbecuing, frying or oven cooking, this simple homemade mix will ensure fabulous taste! (See the bottom of the page for links to more of my recipes)

What'll You'll Need: (makes about 7-8 tablespoons) 

3 tbsp coriander seeds
2 tbsp dried thyme
2 tbsp dried rosemary
1 tbsp smoked paprika powder (or regular paprika)
1 tbsp garlic powder
4 tsp black peppercorns
4 tsp cumin seeds
2 tsp mustard powder
2 tsp cayenne pepper
2 tsp salt 
(see note 2 below)

tbsp = tablespoon
tsp = teaspoon

Directions:

  • Grind the salt, rosemary, peppercorns, coriander and cumin seeds
  • Add to a bowl
  • Stir in the cayenne, mustard, garlic and paprika powders 
  • Finally, crumble in the dried thyme and combine thoroughly

Store your dry rub for steak in a cool place in an airtight jar and out of direct sunlight. Use within months before making up a fresh amount.

Note: Before grinding, dry toasting the coriander, cumin and peppercorns for a few minutes is something to consider. The heat from the toasting releases massive amounts of flavours and aromas! See the grinding page for info. (Link opens in new window)

Note 2: I recommend using a quality rock/sea/kosher salt but you could use regular table salt if that's all you have available.



Ingredient Note:
When making this steak rub recipe, I use a few whole spices as these give the best flavours. If you only have pre-ground powders just use these, but halve the quantities. For example, 3 tablespoons of coriander seeds equals 4 
teaspoons of pre-ground coriander
. Reduce any others you don't have whole by half as well and stir in with any other powders when making.

If you have a favoured method keep on doing that. This is my preferred way...

  • Liberally cover your meat and massage in so it's evenly covered
  • Place in a sandwich bag or cover with plastic wrap and place in the refrigerator for at least an hour or, even better, overnight
  • Take out of the fridge an hour before cooking and let it return to room temperature
