You've fired up the grill and your meat is ready for flavouring, now all you need is a steak seasoning and you're set. And whether you're grilling, frying or oven cooking, this homemade blend of herbs and spices will season perfectly and add fabulous flavours and mouthwatering aromas to your succulent meat. What You'll Need: (makes about 9-10 tablespoons)
3 tbsp coriander seeds
2 tbsp cumin seeds
2 tbsp dried parsley
1 tbsp chili powder
1 tbsp onion powder
1 tbsp black peppercorns
4 tsp paprika powder
4 tsp dried thyme
1 tbsp garlic powder
2 tsp mustard powder
2 tsp dill seeds
2-3 tsp salt (see note 2 below)
tbsp = tablespoon
Directions:
Store in a cool place in an airtight jar out of direct sunlight. Use within 3 months.
Note: You can dry toast the whole coriander, cumin and peppercorns before grinding and combining with the other ingredients. The heat from the toasting releases fabulous flavours and aromas. Click here for step-by-step info on this. (Link opens in new window)
Note 2: You can use regular table salt for this recipe if that's all you have. However, I recommend using a quality sea, rock or kosher salt. Not only is it healthier, your seasoning, and therefore your dishes, will taste better!
Ingredient Note: This steak spice uses a few whole ingredients which are then ground before combining with the other ingredients. However, if you don't have them all whole, simply use pre-ground powders but reduce the amounts the recipe requires by half. For example, for 2 tablespoons of cumin seeds you would use 1 tablespoon of pre-ground cumin. Reduce any other ingredients you don't have whole by half as well and stir in with any other powders when making.
