This turkey seasoning is just the blend if grilling, frying or oven cooking a bird! It's a paprika based blend combined with dried herbs and other spices, it can be made in only minutes and is versatile enough to be used with chicken and game. Ingredients: (makes about 7-8 tablespoons)
4 tbsp smoked paprika powder (or any variety)
2 tbsp dried basil
1 tbsp black peppercorns
1 tbsp garlic powder
4 tsp dried oregano
2-3 tsp chili powder
2 tsp salt (see note 2 below)
2 tsp onion powder
8-10 dried bay leaves
tbsp = tablespoon
tsp = teaspoon
Directions:
Stored in an airtight jar in a cool place and out of direct sunlight, this turkey spice will retain its flavours for a while. I like to use it within 3 months before making a fresh lot.

Note 2: If you have them to hand, I recommend using a quality rock/sea/kosher salt as they're less processed. However you can happily use regular table salt if that's all you have available.
Ingredient Note: If you don't have peppercorns, use pre-ground and reduce the quantity the recipe says by half. So you use 1½ teaspoons of ground pepper instead of 1 tablespoon of whole peppercorns.
